Easy, festive, delicious, pumpkin pie… for breakfast!

And no, not the ‘sneak-a-piece-of-leftover-pie-while-the-kids-aren’t-looking’ kind of breakfast. A fuel-packed oatmeal that you can happily feed your family, with little prep the night before and no work in the morning!!

How good does that sound?!

As I sit here enjoying my second bowl today (and thinking about how happily all my kids ate their breakfast this morning), I am pretty confident that you will like this one.

Unless you don’t like pumpkin, of course. Then you might as well not bother with this one, and instead make my original overnight steel-cut oatmeal or my eggnog slow cooker oatmeal!

Halloween is tomorrow… Are you ready?

Or, like me, are you totally oblivious and a last-minute prepper for the ‘day of candy’?

I am actually not a big fan of Halloween, but I won’t begrudge my kids the chance to look adorable and beg for candy that I can later eat. ;o) I mean, that’s really what it’s all about, right?!

I am trying to get better at making special days a little more… special. I tend to be a little lazy on the special-stuff for my kids, especially if that special stuff means more work and more cleaning (which it usually does!).

But I am learning that if I focus on the little things, like making something I already have to do, a little more special, the memories are made and the kids are thrilled. It really is the little things. Like smiley faces on waffles.

So, how about this super-cute breakfast to start off the day?

My boys were so excited when they saw these “pumpkin smiley face waffles” as they called them. And I was more than happy to enjoy a waffle slathered with chocolate-hazelnut spread for breakfast! Yum!

overnight slow cooker eggnog steel-cut oatmeal

I love fall so so much. Every tiny little thing about it! Of course, I especially look forward to the food… and the eggnog!

As I sat there sipping my eggnog-laced coffee the other day, I couldn’t help but think about all the other ways I could possibly enjoy one of my favorite parts of the holiday season.

Eggnog lattes, and eggnog-latte sugar cookies… eggnog-frosted nutmeg cookie logs and eggnog and coffee ice creams eaten at the same time…

Have I mentioned I have a slight obsession with eggnog?

I have been thoroughly enjoying the early eggnog-latte season at all the local coffee shops this year. The day eggnog leaves us for the year is always a sad day in my house!

So, naturally, I decided to take my favorite Slow Cooker Steel-Cut Oatmeal recipe and turned it into Eggnog Oatmeal. Oh My Yum!!! What a perfect breakfast!
