more pregnancy cravings…

This time we are heading over to the very unhealthy side of things.

No more blueberry cravings for this girl. Nope.

Now, I am craving buffalo wings!

More specifically… Applebee’s buffalo wings. Why? I have no idea.

Last night Andrew spoiled me by making sautéed buffalo chicken breasts for dinner, and man were they good!

I had this craving at the very end with Haakon… and I wasn’t too surprised to see it come back. Even though I don’t really understand it!

What were some of your pregnancy cravings?

NO beef?!

Well, this baby is making him or herself known about one thing, that’s for sure…

He or she is not a big fan of beef!

You have no idea how sad this makes me!

Yes, I can stomach a few bites of meat… but not if it’s ground beef. Not at all!

What I’m really craving (and what my freezer is decidedly not full of, since we just bought half a cow!)… is fish.

Fish, fish, fish. (And chicken, but mostly fish).

Right now I am obsessively dreaming of a fish sandwich.

So much so that I will probably find myself driving ridiculously out of my way to go get one when it’s time to pick up Navy from school.

Ugh.

Anyone have a freezer full of fish they want to get rid of? :o)

chicken BLT sandwiches

A Bacon, Lettuce & Tomato sandwich… with a perfectly cooked thin, tender chicken breast and a layer of cheddar cheese… on a toasted ciabatta bun. Heaven in sandwich form. Seriously!

I have been craving BLTs like crazy since I am now able to eat tomatoes again (Haakon has pretty much weaned)… and for round two of “BLT-cravings-satisfied” of this week, that craving turned into this sandwich.

A fired-up BLT meal. Quite possibly the best sandwich I have ever had. Ever.

Of course this is more of a method than an exact recipe. Use as much of each ingredient as you like!

Don’t like tomatoes? Leave them off! Want mustard instead of mayo? Go for it!

Whatever floats your boat… just make sure you don’t forget the bacon!

Chicken BLT Sandwiches Recipe
makes 4 sandwiches

Ingredients:
4 ciabatta buns
1 pound bacon
4 chicken tenders
cheddar cheese, sliced
mayo
iceberg lettuce
tomatoes

Directions:
Fry the bacon until crisp. Set aside to drain on a paper towel. Use a paper towel to blot out most of the bacon grease (or pour it off to save it for another use) and keep the pan warm for the chicken.

Place the chicken tenders (or use chicken breasts, and cut them to fit the buns after you cook them!) in a freezer bag and gently pound until uniformly thin, about 1/4-1/2″ thick.

Fry the chicken in the remaining bacon grease over medium heat, seasoning them with salt and pepper and cooking for a minute or two per side, until no longer pink in the middle.

Remove the chicken to a plate and then place the buns, face down, into the pan to toast a bit and warm up.

When they are warm, assemble each sandwich.

Spread mayo on both sides of the bread. Starting at the bottom, layer chicken, bacon, tomatoes, lettuce, cheese and then the top roll half.

Serve immediately with a salad (or french fries, if you’re going all out!).

it’s a good thing…

there is no Top Pot donut shop on the peninsula… because I’m pretty sure if I was even an hour away from them, I would jump in the car right now and go buy a dozen of these maple-glazed old-fashioneds.

AND I would most likely have them all eaten before I got back home. :o/

Wow, that’s a strong craving. I wonder how much crap I’ll end up eating today to try and satisfy it??

the cravings are changing…

Remember my ice cream craving from my last pregnancy (and a little bit of the beginning of this one…)??

Yeah, this stuff:
Well, that craving has changed. Now, this new one is not so different, but just as opinionated, and the lonely half-eaten container of Vanilla-Chocolate-Strawberry ice cream in my freezer is now inedible to me.
My new friend?
Breyers Vanilla, Caramel ice cream. Well, actually just the caramel ice cream, but they don’t sell it by itself. Only in this duo. So, yes, there is a container half-full of vanilla ice cream in my freezer too… This could get complicated!
But back to the point… if you have never tried Breyers’ Caramel ice cream you are really missing something! It is so amazingly good. Just don’t grab the last container if we are at the store at the same time, or I will come after you! ;o)
Oh, and in case you’re keeping track… my blueberry craving has ended now too! Which is a great thing as I was beginning to worry this little one was going to come out looking like a smurf!
