a comparison…

of my boys!
(click on the pictures if you’d like to see them bigger!)

as he grows…

baby Haakon at: 1 week old
& at: almost 5 months old!
Can you believe how much he’s grown?

(Now hopefully I will be able to remember to do another picture at about 10 months or so!)

dark chocolate nutella no bake cookies

Yep. I did it.

I subbed out the peanut butter for nutella in my no bake cookie recipe from last week…

Dark chocolate nutella no bakes. Yum and yum. :o)

I can’t decide which version of the recipe I like better. I think it’s actually just a mood thing. Peanut butter is… well, peanut butter. Perfect. Nutella is heavenly. A bit more chocolate, a bit deeper, a bit less sweet… mmm… both good!

If you hate coconut you can sub it out for more oatmeal, but give it a try… it adds an amazing layer of chewiness that is so good!

Nutella No Bake Cookies Recipe
Ingredients:
1/2 cup butter
1/2 cup dutch-processed cocoa powder
1 1/2 cups sugar
pinch of salt
1/2 cup milk
1/2 cup nutella
1 teaspoon pure vanilla extract
2 cups old fashioned rolled oats
1 cup sweetened flaked coconut
Directions:
In a medium saucepan, over medium heat, melt together the butter, cocoa, sugar, salt and milk. Stir and cook until the mixture comes to a boil and then let boil for 1 minute.
Remove from the heat and stir in the nutella and vanilla until smooth, and then stir in the oats and coconut.
Scoop onto parchment-lined baking sheets.
Place in the fridge to set for a few hours and then transfer to a tupperware container if you are not going to serve them right away. Store in the fridge!

this is what happens…

when your 2 year old learns how to climb out of his crib and plays ohsoquietly when he’s supposed to be sleeping.

Yes, that is his toy shopping cart.

Yes, he is very stuck.

Yes, I did run and get my camera instead of saving him right away!

Wouldn’t you?!

(I just wish someone could have video-taped me trying to get him out of there! :o) He was very VERY stuck!)

playing with grandma…

Haakon is growing up so fast!

He is such a sweet, always happy boy… I just can hardly stand it!! :o)

Grandma got some good one-on-one time with him a few weeks ago when they were visiting…

He sure does love his grandma! :o)
